| 内容記述 | “Vegetables stored under snow" are vegetables that are grown in autumn and stored under snow in winter. Anama turnip is the traditional vegetable grown in Ono city, Fukui prefecture. In this work, we did listening survey about Anama turnip and its storage under snow method from some experts who know a lot about Anama turnip. They said that about 1 ton of Anama turnip stored under snow is produced per year in this city, and that it is generally known the vegetables stored under snow become more delicious and sweeter than the fresh ones. But scientific evidence about such changes of nutrients of Anama turnip stored under snow has not been obtained. We thus decided to study the changes of some ingredients such as sugars and amino acids in Anama turnip before and after storage under the snow. | |||||
